Tomato vankaya(brinjal) curry:
ingredients:
large onion-1
tomato-3
brinjal-1/4kg
green chilli-2
curry leafs-1
red chilli powder-1tsp
chana dal-1/2cup
urad dal-1tsp
mustard seeds-1tsp
cumin seeds-1tsp
salt-to taste
turmeric powder-1/2tsp
oil-2tsp
ginger & garlic paste-1tsp
corianderleaves
preparation:
Take bowl and put 2 glasses of water add 2 spoons salt.cut the brinjals,each brinjal cut into 4 peaces and put into the salt water.bcoz of no change the colour brinjals.And remainig vegtables wash and chop chilli,onion,tomato.
Heat the pan and take 2tea spoons of oil, add popu dinusulu(chana dal,mustard seeds,urad dal,cumin seeds),turmeric powder.
Wait for popu dinusulu become brownish.
Add curry leafs,chilli,onion cook stil onion is transperent.
Then add ginger garlic paste after few seconds add chopped brinjals.
After 3minutes add chopped tomato and salt.
After 2 minutes add red chilli powder, cook 2minutes.
Finally garnish with coriander leaves and serve with rice.
